cake for breakfast?

It’s common knowledge that Breakfast is the most important meal of the day, and yet so many people skip it; personally I wouldn’t make it past the front door without some porridge and toast and I always make time for it, but not everyone has that luxury and as a nation we have become used to not breaking the fast until mid-morning or later.

What if I told you that you can have breakfast on the go…and it involves cake? Or rather, muffins? Would that change your mind? I made these at the weekend for my Dad who decided he wanted to give breakfast a go but needed something he could take to work and eat at his desk…

Apple and Date Breakfast Muffins:
You’ll need:

50g Butter
100g Wholemeal Flour
40g Muscovado Sugar
1.5 tsp baking powder
120g dried, chopped dates (un-sweeted is preferable)
1tsp mixed spice
1 eating apple
1 egg, beaten
100ml skimmed milk
Zest of half an orange

The steps:

Preheat the oven to 180˚C/350˚F/gas mark 4.

Line 8 holes of a muffin tin with muffin cases or greaseproof paper. In a bowl, gently rub the butter into the flour to make fine crumbs. Add the sugar. Stir in the baking powder, chopped dates and spice.
In a separate bowl, grate the apple, including the peel, down to the core and combine it with the beaten egg, milk and orange zest.
Tip the wet mixture into the dry ingredients and stir until just combined, but don’t over mix.
Spoon the mixture into the prepared muffin tins and bake for 25 to 30 mins until golden on top and cooked through. Test they’re cooked by inserting a skewer and checking it comes out clean.

Serve warm or cold.    

Each Muffin contains 135 calories and 6.5g Fat.

A batch was also made for my Grandad who loves dates and he declared them “the best muffins”. Don’t be put off by the dates though, when baked they take on a toffee like flavour!

  1. I take a sachet of Dorset Cereals porridge with me to work if I don’t feel like breakfast before I leave – or pack my cereal portion into tupperware to eat at my desk! Flapjacks for brekka are also great!

  2. I make muffins for breakfast! They are great to freeze too so if u want one a few days later just take it out the freezer and microwave for 60 secs PING! Just as good

  3. I am a breakfast skipper, but for entirely different reasons, because I find it hard to find something my stomach can handle in the morning. So I sometimes postpone till the afternoon.

    This looks really good though and perhaps I could even eat it too:) Nice!

    I’m totally the same, I have to get breakfast in me. Also I have to get some juice down me. I don’t feel as if my morning isnt complete if I don’t!

  7. I am not a breakfast eater. I find my tummy isn’t ready for new food until at least 10:30 if not later – which is quite late considering I get up between 5:30 and 6 most days!

    This muffins look awesome though!

  8. Definitely having a go at these at the weekend. I will do breakfast if I can have it on the go or it’s superquick. I’d rather have an extra 10 mins in bed than get up for breakfast, to the point that I always take my morning coffee with me in a travel mug rather than drink it at home.

    That said, I’m more than happy to put prep time into creating breakfast to go, on weekends or in the evenings, to me it’s no difference to taking the 10 mins I need to make my lunch to take with me on the days I’m out and around.

    Muffins sound ideal to me- transportable, tasty, and easy to make and store!

  20. it depends what i’m doing, sometimes i ski, sometimes i have toast or cereal, or on occasion my hubbie takes me to the local greasy spoon 🙂

  21. Ohh I love this idea I’m gonna make these for next week!
    Through the week I eat breakfast in the car on the way to work, a banana and a slice of brown bread and a camomile tea. It’s not always easy to do but I’m always rushing out of the door. Right it’s gonna be a baking weekend- thanks chick x

  27. The idea of muffins for breakfast definitely makes mornings seem more bareable. I’m super lazy in the mornings, so a slice of toast is all I can manage to make (not only am I lazy, I have the culinary skills of a frog). I’ll definitely get my sister to make these 😉 xx

  28. It’s a very good idea, I just don’t like fruit cakes or dried fruit or anything of that ilk! I like the principle though! My local postoffice owner always jokes when I go in by saying, “Not got your toast today?” I invariably eat toast or bagels on the go! Failing that, it’s shredding during the staff meeting!

    I started having breakfast again the other week but found that I’m still eating as much in work as if I don’t eat it. So I just save the calories and have my cereal bars in work instead and just have a cup of green tea for breakfast x
